  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup ditalini pasta
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Dice the onion, celery, and carrots; mince the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions, celery, and carrots for 5–7 minutes until soft.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in ground beef, breaking it up while browning for 5–7 minutes; drain excess fat if necessary.
  5. Add crushed tomatoes, kidney beans, and cannellini beans; mix well.
  6. Pour in 4 cups of water or beef broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  7. Add ditalini pasta; cook for 10–12 minutes until al dente.
  8. Adjust seasoning with salt and pepper to taste; serve hot garnished with fresh parsley or basil if desired.
