- 2 tablespoons extra virgin olive oil
- 1 pound lean ground beef
- 1 ½ cups chopped yellow onions
- 1 cup diced celery stalks
- 1 cup diced carrots
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) low-sodium chicken broth
- 3 cans (8 oz each) tomato sauce
- 1 can (15 oz) diced tomatoes
- ½ cup water
- 2 teaspoons granulated sugar
- 1 teaspoon dried oregano
- 1 ½ teaspoons dried basil
- ¾ teaspoon dried thyme
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper flakes
- Salt and freshly ground black pepper to taste
- 1 cup dry ditalini pasta
- 1 can (15 oz) dark red kidney beans, drained and rinsed
- 1 can (15 oz) great northern beans, drained and rinsed
- 3 tablespoons freshly minced parsley
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add onions, celery, and carrots; cook until softened (about 5 minutes). Stir in minced garlic for an additional minute.
- Push vegetables aside and add remaining olive oil. Brown the ground beef until fully cooked.
- Pour in chicken broth, tomato sauce, and diced tomatoes; stir well.
- Season with sugar, oregano, basil, thyme, smoked paprika, crushed red pepper flakes, salt, and pepper to taste.
- Bring to a boil before adding ditalini pasta; reduce heat to simmer for 10 minutes or until al dente.
- Stir in drained beans and let simmer for another 5 minutes. Before serving, mix in fresh parsley.
