  • 1 pound lean ground beef
  • 1 ½ cups chopped yellow onions
  • 1 cup diced celery stalks
  • 1 cup diced carrots
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) low-sodium chicken broth
  • 3 cans (8 oz each) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • ½ cup water
  • 2 teaspoons granulated sugar
  • 1 teaspoon dried oregano
  • 1 ½ teaspoons dried basil
  • ¾ teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 1 cup dry ditalini pasta
  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 can (15 oz) great northern beans, drained and rinsed
  • 3 tablespoons freshly minced parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add onions, celery, and carrots; cook until softened (about 5 minutes). Stir in minced garlic for an additional minute.
  2. Push vegetables aside and add remaining olive oil. Brown the ground beef until fully cooked.
  3. Pour in chicken broth, tomato sauce, and diced tomatoes; stir well.
  4. Season with sugar, oregano, basil, thyme, smoked paprika, crushed red pepper flakes, salt, and pepper to taste.
  5. Bring to a boil before adding ditalini pasta; reduce heat to simmer for 10 minutes or until al dente.
  6. Stir in drained beans and let simmer for another 5 minutes. Before serving, mix in fresh parsley.
