Ingredients
- 1/4 yellow onion (diced)
- 3 cloves garlic (minced)
- 6–8 oz chicken thighs (cut into bite-sized pieces)
- 1/4 cup frozen mixed vegetables
- 3 brown mushrooms (diced)
- 2 cups cooked white rice (day-old)
- 2 tablespoons ketchup
- 6 large eggs
- 2 tablespoons milk
- Fresh parsley (for garnish)
Instructions
- In a non-stick skillet over medium heat, add oil and sauté diced onions until translucent. Add minced garlic and cook for another minute.
- Stir in chicken pieces and cook until no longer pink. Add mixed vegetables and mushrooms; cook until tender.
- Mix in cooked rice, ketchup, soy sauce, and half of the salt; stir until heated through.
- In a mixing bowl, whisk together eggs, milk, and remaining salt until frothy.
- Pour egg mixture into another non-stick skillet over low heat; let it cook gently without stirring.
- When edges start to set, push them towards the center while tilting the pan to let uncooked egg flow outwards.
- Once the omelet is mostly set but still slightly runny on top, add fried rice on one side and fold the omelet over it.
- Slide onto a plate with the seam side down; garnish with ketchup and minced parsley before serving.
