  • 1 cup (227g) unsalted butter (softened to room temperature)
  • 1 and ¼ cup (250g) granulated sugar
  • ½ cup (160g) orange marmalade
  • 4 large eggs (room temperature)
  • 3 teaspoons vanilla extract
  • zest and juice of 2 large navel oranges
  • ¾ cup (180mL) milk (room temperature)
  • ½ cup (113g) unsalted butter (softened to room temperature)
  • 8 ounces (225g) full fat block cream cheese (softened to room temperature)
  • 2 cups (240g) powdered sugar
  • zest of ½ a large navel orange OR 1 Tablespoon (20g) orange marmalade
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing or lining them with parchment paper.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla, orange zest, and juice.
  5. Gradually add the dry ingredients alternately with milk until just combined. Gently fold in orange marmalade.
  6. Pour batter into prepared pans and smooth the tops. Bake for about 26 minutes or until a toothpick comes out clean.
  7. While cooling, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in zest or marmalade for flavor.
  8. Once cakes are cool, layer with frosting between the cakes and cover the top and sides generously.
