- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup (227g) unsalted butter (softened to room temperature)
- 1 and ¼ cup (250g) granulated sugar
- ½ cup (160g) orange marmalade
- 4 large eggs (room temperature)
- 3 teaspoons vanilla extract
- zest and juice of 2 large navel oranges
- ¾ cup (180mL) milk (room temperature)
- ½ cup (113g) unsalted butter (softened to room temperature)
- 8 ounces (225g) full fat block cream cheese (softened to room temperature)
- 2 cups (240g) powdered sugar
- zest of ½ a large navel orange OR 1 Tablespoon (20g) orange marmalade
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing or lining them with parchment paper.
- In one bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla, orange zest, and juice.
- Gradually add the dry ingredients alternately with milk until just combined. Gently fold in orange marmalade.
- Pour batter into prepared pans and smooth the tops. Bake for about 26 minutes or until a toothpick comes out clean.
- While cooling, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in zest or marmalade for flavor.
- Once cakes are cool, layer with frosting between the cakes and cover the top and sides generously.
