Ingredients
- 6 oz crusty bread (cut into 1-inch cubes)
- 2 lbs ripe tomatoes (cut into small wedges)
- 8 oz fresh mozzarella (halved mozzarella pearls)
- 1/2 medium red onion (thinly sliced)
- 1/2 cup basil leaves (coarsely chopped)
- 2 Tbsp extra virgin olive oil
- 1/2 cup extra virgin olive oil
- 1/4 cup red apple vinegar
- 2 garlic cloves (grated)
- 1/2 tsp salt (or to taste)
- 1/8 tsp black pepper
- 1/8 tsp sea salt
Instructions
- Preheat oven to 400°F. In a mixing bowl, combine bread cubes with olive oil and sea salt. Toss to coat evenly.
- Spread bread on a baking sheet and toast for 9-12 minutes until golden brown and crisp. Set aside to cool.
- In another bowl, whisk together the vinaigrette ingredients until well combined.
- In the mixing bowl used for the bread, combine tomatoes, mozzarella pearls, red onion, and basil. Gently fold in cooled bread cubes.
- Drizzle dressing over salad about 10-15 minutes before serving and toss gently to combine.
