Ingredients
- 8 small to medium zucchinis
- 1 cup panko breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 2 teaspoons dry parsley
- 1 teaspoon dry oregano
- 1 teaspoon dry basil
- ½ teaspoon garlic powder
- ¼ cup mayonnaise
- 2 tablespoons extra virgin olive oil

Instructions

- Cut zucchinis lengthwise into quarters.
