  • 1 stick butter (1/2 cup)
  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with a stick of butter in a 9×13 baking pan.
  2. Once melted, remove the pan and cut each potato in half, scoring each half lightly.
  3. In a mixing bowl, combine Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper.
  4. Sprinkle the seasoning mixture in the pan over the melted butter and place the potatoes cut-side down on top.
  5. Spray tops with nonstick cooking spray and sprinkle with remaining herb seasoning.
  6. Bake uncovered for about 40 minutes or until tender when pierced with a fork.
