  • 1 cup diced onion
  • 2 cloves minced garlic
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced potatoes
  • 15 ounces drained cannellini beans
  • 14.5 ounces drained diced tomatoes
  • 1 quart cold water
  • 1 quart beef broth or vegetable broth
  • 8 ounces ditallini or elbow macaroni
  • Olive oil
  • Salt
  • Pepper
  • Butter
  • Grated Parmesan cheese

Instructions

  1. In a large pot, sauté the onion and garlic in olive oil until translucent. Season with salt.
  2. Add the carrots, celery, and potatoes; sauté for about 10 minutes until softened.
  3. Stir in the tomatoes, cannellini beans, water, broth, salt, and pepper.
  4. Bring to a boil; then reduce heat and simmer uncovered for 45-60 minutes.
  5. Remove any Parmesan rind if used and partially blend the soup with an immersion blender for desired consistency.
  6. Bring back to a boil and add pasta; cook according to package instructions until al dente.
  7. Stir in butter and grated Parmesan cheese; serve hot with extra olive oil drizzle.
