Ingredients
- 1 cup diced onion
- 2 cloves minced garlic
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced potatoes
- 15 ounces drained cannellini beans
- 14.5 ounces drained diced tomatoes
- 1 quart cold water
- 1 quart beef broth or vegetable broth
- 8 ounces ditallini or elbow macaroni
- Olive oil
- Salt
- Pepper
- Butter
- Grated Parmesan cheese
Instructions
- In a large pot, sauté the onion and garlic in olive oil until translucent. Season with salt.
- Add the carrots, celery, and potatoes; sauté for about 10 minutes until softened.
- Stir in the tomatoes, cannellini beans, water, broth, salt, and pepper.
- Bring to a boil; then reduce heat and simmer uncovered for 45-60 minutes.
- Remove any Parmesan rind if used and partially blend the soup with an immersion blender for desired consistency.
- Bring back to a boil and add pasta; cook according to package instructions until al dente.
- Stir in butter and grated Parmesan cheese; serve hot with extra olive oil drizzle.
