Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 1/2 cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 3 cans tomato sauce (8 oz each)
  • 2 cans low-sodium chicken broth (14.5 oz each)
  • 1 can diced tomatoes (15 oz)
  • 1 cup dry ditalini pasta
  • 1 can dark red kidney beans (15 oz), drained and rinsed
  • 1 can great Northern beans (15 oz), drained and rinsed
  • Fresh parsley for garnish

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add the ground beef and brown it while breaking it apart, then drain excess fat.
  2. In the same pot, add the remaining tablespoon of olive oil, followed by onions, carrots, and celery. Sauté for about 6 minutes until soft; add garlic and cook for another minute.
  3. Stir in tomato sauce, diced tomatoes, chicken broth, water, sugar, and herbs. Return the beef to the pot; season with salt and pepper. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15–20 minutes.
  4. Cook ditalini pasta separately until just shy of al dente; drain.
  5. Add cooked pasta along with kidney beans and great Northern beans to the soup mixture. Stir well and simmer for an additional 2 minutes; adjust consistency with extra water if needed.
  6. Just before serving, stir in minced parsley and top each bowl with grated cheese.
