  • 3 ribs celery, diced

  • 29 oz diced tomatoes (with liquid)
  • 15 oz dark red kidney beans (drained)
  • 15 oz cannellini beans (drained)
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta

Instructions

  1. Brown the ground beef in a Dutch oven over medium heat for about 7 minutes until fully cooked. Drain excess grease.
  2. Add the diced onion, carrots, and celery; sauté for about 10 minutes. Stir in minced garlic and cook for an additional 1-2 minutes.
  3. Incorporate diced tomatoes, beans, tomato sauce, and beef broth; simmer for 20 minutes to meld flavors.
  4. Cook Ditalini pasta separately according to package instructions.
  5. Just before serving, mix drained pasta into the soup and garnish with fresh herbs if desired.
