  • 1 pound ground beef
  • 3 tablespoons olive oil (divided)
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 15 ounces fire roasted tomatoes (do not drain)
  • 1 tablespoon Italian seasoning
  • 1 cup dry ditalini pasta
  • 15 ounces red kidney beans (drained and rinsed)
  • 15 ounces cannellini beans (drained and rinsed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh parsley (chopped finely)

Instructions

  1. Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Add ground beef and cook until browned. Remove meat and drain excess fat.
  2. In the same pot, add another 2 tablespoons of olive oil. Sauté diced onion, carrots, and celery until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Return the cooked meat to the pot; add chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, and ditalini pasta. Mix well.
  5. Bring to a boil; then reduce heat to low and cover. Simmer for about 15 minutes.
  6. Stir in drained kidney beans and cannellini beans; heat through for an additional few minutes.
  7. Season with salt and pepper to taste before serving.
