  • 2½ cups crushed pretzels
  • ¾ cup melted butter
  • ¾ cup granulated sugar
  • 12 ounces cream cheese
  • 2 teaspoons vanilla extract
  • 12 ounces Cool Whip
  • 6 ounces peach vegan gelatin
  • 4 cups fresh peaches, peeled and diced
  • 2 cups boiling water
  • 2 cups ice water

Instructions

  1. Preheat the oven to 350°F and lightly butter a 9×13 pan.
  2. In a medium bowl, mix the crushed pretzels, melted butter, and ¾ cup sugar. Press firmly into the bottom of the prepared pan and bake for 10 minutes. Allow to cool completely.
  3. In a large bowl, beat together cream cheese, remaining sugar, and vanilla until smooth. Fold in Cool Whip and spread over the cooled crust.
  4. In another bowl, dissolve peach gelatin in boiling water. Stir in ice water and diced peaches. Refrigerate for about 15 minutes until thickened but not set.
  5. Pour the jello mixture over the cream cheese layer, cover with plastic wrap, and refrigerate for at least two hours before serving.
