- 2½ cups crushed pretzels
- ¾ cup melted butter
- ¾ cup granulated sugar
- 12 ounces cream cheese
- 2 teaspoons vanilla extract
- 12 ounces Cool Whip
- 6 ounces peach vegan gelatin
- 4 cups fresh peaches, peeled and diced
- 2 cups boiling water
- 2 cups ice water
Instructions
- Preheat the oven to 350°F and lightly butter a 9×13 pan.
- In a medium bowl, mix the crushed pretzels, melted butter, and ¾ cup sugar. Press firmly into the bottom of the prepared pan and bake for 10 minutes. Allow to cool completely.
- In a large bowl, beat together cream cheese, remaining sugar, and vanilla until smooth. Fold in Cool Whip and spread over the cooled crust.
- In another bowl, dissolve peach gelatin in boiling water. Stir in ice water and diced peaches. Refrigerate for about 15 minutes until thickened but not set.
- Pour the jello mixture over the cream cheese layer, cover with plastic wrap, and refrigerate for at least two hours before serving.
