  • 1 pound boneless, skinless chicken breasts
  • 11/2 cups diced fresh peaches
  • 1/2 cup diced red pepper
  • 1 tablespoon finely diced jalapeño
  • 1/3 cup diced red onion
  • 1 lime (juiced)
  • 1/3 cup coarsely chopped fresh cilantro
  • 1 cup peach preserves
  • 11/2 tablespoons olive oil
  • 1 tablespoon reduced-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat (400–450°F) and oil the surface.
  2. Halve the peaches, remove pits, and brush them with oil. Grill for about 4–5 minutes until tender and charred; chop into small pieces.
  3. In a bowl, combine grilled peaches with diced red pepper, jalapeño, red onion, lime juice, cilantro, salt, and pepper; refrigerate.
  4. Mix together peach preserves, olive oil, soy sauce, mustard, garlic, and jalapeño in another bowl; set aside one-third of the glaze.
  5. Season chicken breasts with olive oil, salt, and pepper. Grill for 8–10 minutes while basting with glaze until cooked through.
  6. Let chicken rest before brushing with reserved glaze and topping with peach salsa.
