  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • Optional: 1/2 to 2/3 cups chopped nuts (pecans, walnuts, hazelnuts, or peanuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. In another bowl, cream together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually add the dry mixture to the wet ingredients in three portions while alternating with sour cream until just combined.
  5. Gently stir in mashed bananas and optional nuts until evenly distributed.
  6. Pour the batter into the prepared loaf pan and bake for about 50 to 55 minutes or until a toothpick comes out clean from the center.
  7. Allow cooling in the pan for about ten minutes before transferring to a wire rack to cool completely.
