  • 1 large fresh pineapple
  • 4 kiwis
  • 810 fresh mint leaves
  • 2 limes
  • 2 tablespoons honey

Instructions

  1. Toast the shredded coconut in a skillet over medium-low heat until golden brown, about 3-5 minutes. Set aside.
  2. Cube the pineapple and scoop out the kiwi flesh. Combine both fruits in a large mixing bowl.
  3. Thinly slice fresh mint leaves and add them to the bowl.
  4. In a separate bowl, whisk together lime zest, lime juice, and honey until well combined.
  5. Pour the dressing over the fruit mixture and toss gently to coat. Refrigerate until ready to serve.
