- Toast the coconut in a skillet over medium-low heat for 3-5 minutes until lightly browned; set aside to cool.
- Cube the pineapple and scoop out the kiwi flesh; cut into bite-sized pieces. Combine both fruits in a mixing bowl.
- Thinly slice mint leaves and add them to the fruit mixture.
- In a separate bowl, whisk together lime zest, lime juice, and honey until well combined.
