  • 2 1/2 tsp pumpkin pie spice
  • pinch of salt
  • 1/2 cup (122 g) canned pumpkin puree
  • 1 3/4 cups (219 g) all purpose flour, spooned and leveled
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 1 cup (220 g) brown sugar, packed
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla extract
  • 1 cup (130 g) powdered sugar
  • 24 tsp whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and brown sugar until fluffy. Add canned pumpkin puree and mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add to the wet mixture until combined.
  4. Scoop dough onto the baking sheet, spacing them 2 inches apart.
  5. Bake for about 11 minutes until golden around the edges. Allow to cool slightly before transferring to a cooling rack.
  6. For icing: whisk powdered sugar with vanilla extract and enough milk for desired consistency; drizzle over cooled cookies.
