  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press half of the crumble mixture into the bottom of the prepared dish as the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture over the filling and add chopped walnuts if desired.
  7. Bake for 30-35 minutes until golden brown on top and filling is set.
  8. Allow to cool completely before slicing into squares.
