Ingredients

- 3–4 small-medium pumpkins

- Whisk together egg yolks and sugar, then gradually mix in the hot cream to avoid curdling.
- Stir in pumpkin puree and spices until smooth.
- Pour custard into the prepared pumpkins and bake in a water bath at 325°F (163°C) for about 65 minutes.
- Cool and refrigerate for at least 4 hours before caramelizing the sugar on top with a kitchen torch just before serving.
