  • 5 egg yolks
  • ⅓ cup granulated sugar
  • ⅔ cup pumpkin puree
  • ¼ teaspoon kosher salt
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • tiny pinch ground cloves
  • 34 small-medium pumpkins

Instructions

  1. Prepare mini pumpkins by washing and hollowing them out.
  2. In a saucepan, heat heavy cream and vanilla until simmering.
  3. Whisk together egg yolks and sugar, then gradually mix in the hot cream to avoid curdling.
  4. Stir in pumpkin puree and spices until smooth.
  5. Pour custard into the prepared pumpkins and bake in a water bath at 325°F (163°C) for about 65 minutes.
  6. Cool and refrigerate for at least 4 hours before caramelizing the sugar on top with a kitchen torch just before serving.
