  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup dark brown sugar
  • 1 tsp coarse Kosher salt
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup cold, unsalted butter
  • 12 oz rhubarb, diced
  • 1/4 tsp baking soda
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup strawberry jam
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and grease an 8×8 baking dish.
  2. In a food processor, combine flour, oats, brown sugar, salt, baking powder, cinnamon, and cold butter until crumbly.
  3. Reserve 1 ½ cups of this mixture for topping; press the rest firmly into the bottom of the baking dish and bake for 20 minutes.
  4. For the filling, mix diced rhubarb with baking soda, granulated sugar, flour, jam, lemon juice, and vanilla in a bowl.
  5. Spread the filling over the baked crust and bake for another 30 minutes until bubbly.
  6. Sprinkle reserved topping over the filling and bake for an additional 20–25 minutes until golden brown.
  7. Let cool completely before slicing into squares.
