Ingredients

Scale
  • 2 1/4 cups heavy whipping cream
  • 1 1/2 cups whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 large egg
  • 10 oz bittersweet chocolate baking chips
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Prepare the chocolate ganache by simmering the heavy whipping cream in a small saucepan. Pour it over the bittersweet chocolate chips in a bowl and let it sit for five minutes before stirring until smooth.
  2. Make the custard base by whisking together sugar, egg yolks, egg, and cocoa powder in a separate bowl. Heat the whole milk until simmering and gradually mix it into the egg mixture while whisking.
  3. Return the custard mixture to low heat until slightly thickened, then strain it into the prepared ganache and stir in the vanilla extract.
  4. Let the mixture cool in the refrigerator for at least four hours before churning it in an ice cream maker according to manufacturer instructions. Freeze for an additional two to four hours before serving.
