Ingredients
- 3 medium-sized tomatoes
- 2–10 habanero peppers (adjust for desired heat)
- 1 red bell pepper
- 2 jalapeno peppers
- 1 medium-sized mango (peeled and chopped)
- Juice from 1 lime
- 3 tablespoons fresh chopped cilantro
- 1 teaspoon olive oil
- Salt to taste
Instructions
- Preheat your oven to broil.
- Halve the tomatoes and place cut-side up on a baking sheet. Halve the habaneros and jalapenos, and quarter the red bell pepper; place alongside the tomatoes.
- Broil for about 15 minutes until vegetables are charred but not burnt; broil tomatoes longer if needed.
- In a sauté pan, heat olive oil over medium heat, add chopped mango, and sauté until lightly browned (about 6-8 minutes).
- Cool all roasted vegetables, peel skins off tomatoes, jalapenos, and red bell pepper.
- In a food processor, combine peeled ingredients, sautéed mango, lime juice, cilantro, and salt; blend until desired consistency is reached.
- Chill in the refrigerator for at least four hours or serve immediately.
