  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (roughly chopped)
  • 1 head of garlic (halved)
  • 1/4 cup extra-virgin olive oil
  • 1 cup vegetable broth (or chicken broth)
  • 1/4 cup heavy cream (adjust with more cream if desired)
  • 5 large basil leaves (plus more for serving)
  • 1 teaspoon balsamic vinegar
  • Kosher salt and freshly ground black pepper (adjust with sugar if desired)
  • 1 French or sourdough baguette (thinly sliced)
  • Olive oil and shredded Gruyère (enough to fill the surface area of the toasts)

Instructions

  1. Preheat your oven to 400°F.
  2. Toss roma tomatoes, cherry tomatoes, chopped onion, halved garlic, olive oil, salt, and pepper in an oven-safe dish. Roast for 30-40 minutes until tender.
  3. For stovetop preparation, combine all ingredients in a large pot on medium heat and simmer until tender.
  4. On a baking sheet, drizzle sliced baguette with olive oil and top with shredded Gruyère. Bake until cheese melts and bread is crispy, about 15 minutes.
  5. Blend the roasted mixture with vegetable or chicken broth until smooth; stir in heavy cream and balsamic vinegar before serving.
  6. Top bowls with fresh basil and crispy toasts.
