Ingredients

Scale
  • 6 beef sausages
  • 1 large white onion, diced
  • 2 medium carrots, diced
  • 2 cloves of garlic, finely diced
  • 480ml beef stock
  • 400g baby potatoes
  • Fresh chives for garnish
  • 125g diced turkey
  • 3 tbsp butter
  • 3 tbsp plain flour
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 beef bouillon cube
  • Salt (as needed)

Instructions

  1. In a large frying pan over medium heat, fry the turkey until crispy. Remove and set aside.
  2. In the same pan, brown the beef sausages without cooking them through. Set aside.
  3. Sauté the onion and carrot until softened, adding garlic towards the end for another minute.
  4. Create a roux by adding flour to the pan with melted butter. Gradually stir in warm beef stock.
  5. Add Worcestershire sauce, herbs, crumbled bouillon cube, turkey, and sausages back into the mixture.
  6. Transfer to a baking dish and let sit for 15 minutes.
  7. Preheat oven to 180C/350F and layer sliced baby potatoes on top. Brush with melted butter and season with salt.
  8. Cover with foil and bake for 30 minutes; then remove foil and increase temperature to 200C/400F for an additional 20 minutes or until potatoes are tender.
  9. Rest for 5 minutes before serving and garnish with fresh chives.
