- 6 beef sausages
- 1 large white onion, diced
- 2 medium carrots, diced
- 2 cloves of garlic, finely diced
- 480ml beef stock
- 400g baby potatoes
- Fresh chives for garnish
- 125g diced turkey
- 3 tbsp butter
- 3 tbsp plain flour
- 2 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/4 tsp dried rosemary
- 1/4 tsp dried thyme
- 1/4 tsp black pepper
- 1 beef bouillon cube
- Salt (as needed)
Instructions
- In a large frying pan over medium heat, fry the turkey until crispy. Remove and set aside.
- In the same pan, brown the beef sausages without cooking them through. Set aside.
- Sauté the onion and carrot until softened, adding garlic towards the end for another minute.
- Create a roux by adding flour to the pan with melted butter. Gradually stir in warm beef stock.
- Add Worcestershire sauce, herbs, crumbled bouillon cube, turkey, and sausages back into the mixture.
- Transfer to a baking dish and let sit for 15 minutes.
- Preheat oven to 180C/350F and layer sliced baby potatoes on top. Brush with melted butter and season with salt.
- Cover with foil and bake for 30 minutes; then remove foil and increase temperature to 200C/400F for an additional 20 minutes or until potatoes are tender.
- Rest for 5 minutes before serving and garnish with fresh chives.
