Instructions

  1. Wash and dry the zucchini thoroughly. Cut in half lengthwise and scoop out some seeds if desired. Slice into half-moons about ½ inch thick.
  2. Heat a large skillet over high heat and add olive oil, swirling to coat.
  3. Add zucchini in an even layer and cook for 2 minutes until golden on one side. Stir gently and cook for another 2 minutes until slightly softened.
  4. Season with salt and pepper, cover with a lid, and cook for an additional 2-3 minutes while stirring occasionally.
  5. Reduce heat to medium, melt butter in the skillet, add minced garlic, and stir well. Cook for another minute until crisp-tender and sprinkle with red chili flakes if desired.
