- 2 tablespoons olive oil
- 1 pound ground turkey
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 1/2 pounds zucchini, diced
- 2 cups cooked groats (or brown rice/quinoa)
- 1 can (14.5 oz) diced tomatoes
- 1/2 teaspoon oregano
- 1/2 teaspoon smoked paprika
- 1/2 cup fresh basil, finely chopped
- 7 ounces shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add olive oil. Once hot, sauté chopped onion and minced garlic until fragrant.
- Add ground turkey and cook until browned, about 5–7 minutes.
- Stir in the diced zucchini and cook for another 5 minutes until slightly softened.
- Add cooked groats (or chosen grain), diced tomatoes, oregano, smoked paprika, and fresh basil. Mix well.
- Transfer the mixture to a greased casserole dish and spread evenly across the bottom. Sprinkle shredded cheddar on top.
- Bake in the preheated oven for about 20–25 minutes or until bubbly and cheese is melted.
