  • 1 bay leaf
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley (chopped, for garnish)

  • 1 red bell pepper (diced)
  • 12 small jalapeños (seeded and chopped)

Instructions

  1. Wash and chop all vegetables: onion, celery, potatoes, red bell pepper, and jalapeños if desired.
  2. In a large pot over medium heat, melt butter. Add onions, celery, red bell pepper, jalapeños (if using), garlic powder, smoked paprika, bay leaf, salt, and pepper. Sauté until onions are translucent.
