- 2.5 lb beef chuck, cut into large cubes

- 2 celery stalks, sliced
- 1 red bell pepper, chopped
- 1 tablespoon tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 cup dry apple vinegar
- 1 cup beef stock
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 325°F (160°C).
- In a heavy-duty Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides (about 5-7 minutes per batch). Remove and set aside.
- In the same pot, sauté onions and garlic until softened (about 3-4 minutes). Add carrots, celery, and red bell pepper; cook for another 5 minutes.
- Return the beef to the pot and stir in tomato paste, crushed tomatoes, apple vinegar, beef stock, oregano, and thyme.
- Cover and bake for approximately 2.5 to 3 hours or until the beef is fork-tender.
