  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced into thick rounds
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a heavy-duty Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides (about 5-7 minutes per batch). Remove and set aside.
  3. In the same pot, sauté onions and garlic until softened (about 3-4 minutes). Add carrots, celery, and red bell pepper; cook for another 5 minutes.
  4. Return the beef to the pot and stir in tomato paste, crushed tomatoes, apple vinegar, beef stock, oregano, and thyme.
  5. Cover and bake for approximately 2.5 to 3 hours or until the beef is fork-tender.
