  • 1 cup beef broth
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp red curry paste
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the ingredients: Cut the beef into cubes and chop the onion, garlic, and ginger.
  2. Sauté aromatics: Heat oil in a large skillet over medium heat. Sauté onions until translucent, then add garlic and ginger; cook until fragrant.
  3. Combine ingredients: Transfer the sautéed mixture to a slow cooker. Add beef, coconut milk, beef broth, red curry paste, curry powder, turmeric, paprika, chili flakes, brown sugar, soy sauce, lime juice, salt, and pepper. Mix well.
  4. Slow cook: Set the slow cooker on low for 6–8 hours or high for 3–4 hours until beef is tender.
  5. Serve: Enjoy over rice or with warm garlic naan, garnished with fresh cilantro.
