  • 2 pounds lean ground beef
  • 2 eggs
  • 1 cup crushed saltine crackers
  • 1/3 cup dry minced onion
  • 1/3 cup milk
  • 1 cup seedless blackberry preserves
  • 1/2 cup hoisin sauce
  • 3 tablespoons Gochujang
  • 1/4 cup red apple vinegar

Instructions

  1. Preheat your oven to 450°F (232°C) and line a rimmed baking sheet with foil.
  2. In a mixing bowl, whisk together the eggs. Add the ground beef, crushed crackers, dry minced onion, milk, and seasonings. Mix until just combined.
  3. Roll the mixture into meatballs and place them on the baking sheet. Bake for about 8 minutes until lightly browned.
  4. Meanwhile, combine all sauce ingredients in another bowl and whisk until smooth.
  5. Layer half of the baked meatballs in your slow cooker with some sauce; repeat with remaining meatballs and sauce.
