  • 2 pounds potatoes (cut into 1 1/22 inch chunks)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • Optional: shredded mozzarella cheese, grated Parmesan cheese, fresh parsley

Instructions

  1. In a slow cooker, combine potatoes, olive oil, salt, pepper, and paprika; stir until coated.
  2. Place chicken on top of the seasoned potatoes and sprinkle with remaining salt and pepper.
  3. In a mixing bowl, whisk together the Parmesan garlic sauce and water; pour over chicken and potatoes.
  4. Cook on High for 4 hours or Low for 6 hours until chicken is cooked through and potatoes are tender.
  5. If using cheese, add mozzarella and Parmesan during the last 20 minutes of cooking until melted.
