  • 1 ½ lb peeled shrimp
  • 4 tablespoons butter
  • 4 cloves garlic (minced)
  • ½ cup white apple vinegar or chicken stock
  • ¼ cup fresh lemon juice (from 1 lemon)
  • 2 ounces baby spinach
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash into rounds about 1 ½ inches thick and place on a baking tray.
  2. Bake for 20 minutes until tender. Let cool slightly, then use a fork to shred into noodle-like strands.
  3. Season shrimp with Italian seasoning, salt, and pepper in a mixing bowl.
  4. Melt butter in a large pan over medium heat. Add minced garlic and sauté for about 1 minute.
  5. Add seasoned shrimp and cook for approximately 2 minutes until they start to turn pink.
  6. Pour in vinegar or stock and lemon juice, bring to a simmer, then fold in baby spinach until wilted.
