  • 500g chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cups jasmine or basmati rice
  • 4 cups water
  • Pinch of salt

Instructions

  1. Rinse the rice until the water runs clear. Combine with water and salt in a pot, bring to boil, then simmer covered for about 15-20 minutes until fluffy.
  2. Marinate chicken in soy sauce and chili paste for about 10 minutes.
  3. Heat oil in a wok over medium-high heat; add garlic and onion, stir-frying until fragrant (about 2-3 minutes).
  4. Add marinated chicken; cook until golden brown (5-7 minutes).
  5. Toss in sliced peppers; stir-fry for another 3-4 minutes until tender-crisp.
  6. Mix in additional chili paste if desired; serve immediately over rice.
