Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken stock
- 1 cup heavy cream
- 3 tbsp peri-peri sauce
- 2 cups cooked white rice
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown. Remove from skillet.
- In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until fragrant.
- Add chicken stock to deglaze the pan. Stir in heavy cream, peri-peri sauce, and lemon juice; let simmer for 3-4 minutes.
- Return the chicken to the skillet and simmer on low heat for 8-10 minutes until fully cooked.
