- 2 celery stalks (diced)

- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 1 cup water
- 1 can (15 oz) red kidney beans (drained and rinsed)
- 1 can (15 oz) cannellini beans (drained and rinsed)
- 1 cup ditalini pasta
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp red pepper flakes (optional, for extra heat)
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Once hot, sauté onion, carrots, and celery until soft (5-7 minutes). Stir in minced garlic for an additional minute.
- Add the spicy Italian sausage and cook until browned and fully cooked through (8-10 minutes).
- Stir in crushed tomatoes, chicken broth, water, kidney beans, cannellini beans, oregano, basil, salt, pepper, and optional Parmesan rind. Bring to a boil.
- Once boiling, add ditalini pasta. Reduce heat to low and simmer for about 15 minutes or until pasta is al dente.
- Remove from heat; adjust seasoning if needed. Serve garnished with chopped parsley or basil and freshly grated Parmesan cheese.
