Ingredients
- 1 lb cheese tortellini
- 3/4 lb asparagus
- 1 cup frozen green peas
- 3 cups arugula
- 12 oz jar artichoke hearts
- 1/2 cup fresh basil leaves
- 3 tablespoons lemon juice
- 1/2 cup olive oil
- 1/3 cup Parmesan cheese
- 1 teaspoon lemon zest
- 1 clove garlic (minced)
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Kosher salt and freshly ground black pepper (to taste)
Instructions
- In a small bowl, whisk together olive oil, Parmesan cheese, lemon juice, lemon zest, minced garlic, honey, Dijon mustard, salt, and pepper. Set aside.
- Bring a large pot of salted water to a boil. Blanch asparagus for 2 minutes, add peas for an additional few seconds until bright green. Transfer to an ice water bowl.
- In the same pot, cook tortellini according to package directions; drain.
- In a large mixing bowl, combine tortellini with half the dressing. Add drained vegetables along with arugula and artichoke hearts. Drizzle with remaining dressing and mix well.
- Season to taste and garnish with additional Parmesan before serving.
