Ingredients
- 1 3/4 lbs. sirloin steak, diced
- 1 large red onion, chopped
- 1 lb. cherry tomatoes
- 2 small zucchini, sliced
- Olive oil, salt, and black pepper
- 1/3 cup olive oil for chimichurri
- 1/2 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 tsp dried oregano
- 1 1/2 Tbsp red apple vinegar
- 1 Tbsp lemon juice
- 1 1/2 tsp minced garlic
Instructions
- Soak wooden skewers for at least an hour if using.
- Preheat your grill to medium-high heat (about 400°F).
- Thread sirloin steak cubes, red onion chunks, cherry tomatoes, and zucchini onto skewers; brush lightly with olive oil and season with salt and pepper.
