  • 6 eggs, separated
  • 1 ½ cups sugar, divided
  • 3 tablespoons lemon juice
  • 3 tablespoons vegetable oil
  • 2 tablespoons water
  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 16 oz heavy whipping cream (more for decoration)
  • ½ cup confectioners’ sugar
  • ½ teaspoon vanilla extract
  • 5 cups sliced fresh strawberries

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, whisk egg yolks with ¾ cup sugar until thick and pale. Add lemon juice, oil, and water. Mix flour and salt; fold into the yolk mixture.
  3. In another bowl, whip egg whites until soft peaks form; gradually add remaining sugar until glossy peaks form. Gently fold whites into yolk mixture.
  4. Spoon batter into an ungreased tube pan and bake for 35–45 minutes until golden and springy.
  5. Cool upside down; then remove from pan and slice horizontally into three layers.
  6. For whipped cream, chill your bowl; beat heavy cream until thickened, then add confectioners’ sugar and vanilla.
  7. Assemble by layering cake with whipped cream and strawberries; repeat layers and top with remaining whipped cream and berries.
