Ingredients
- 6 eggs, separated
- 1 ½ cups sugar, divided
- 3 tablespoons lemon juice
- 3 tablespoons vegetable oil
- 2 tablespoons water
- 1 ¾ cups flour
- ½ teaspoon salt
- 16 oz heavy whipping cream (more for decoration)
- ½ cup confectioners’ sugar
- ½ teaspoon vanilla extract
- 5 cups sliced fresh strawberries
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, whisk egg yolks with ¾ cup sugar until thick and pale. Add lemon juice, oil, and water. Mix flour and salt; fold into the yolk mixture.
- In another bowl, whip egg whites until soft peaks form; gradually add remaining sugar until glossy peaks form. Gently fold whites into yolk mixture.
- Spoon batter into an ungreased tube pan and bake for 35–45 minutes until golden and springy.
- Cool upside down; then remove from pan and slice horizontally into three layers.
- For whipped cream, chill your bowl; beat heavy cream until thickened, then add confectioners’ sugar and vanilla.
- Assemble by layering cake with whipped cream and strawberries; repeat layers and top with remaining whipped cream and berries.
