  • 3 medium zucchini
  • 1 ½ lbs ground turkey
  • 1 medium sweet onion
  • 3 cloves garlic
  • 24 oz marinara sauce
  • 3 Tbsp tomato paste
  • 1 ½ tsp dry Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • 2/3 cup ricotta cheese
  • 1 large egg
  • 3 Tbsp grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 400°F and prepare a baking dish.
  2. Halve zucchini and scoop out seeds, seasoning with salt and pepper.
  3. In a skillet, cook ground turkey and diced onion until cooked through. Add minced garlic.
  4. Stir in marinara sauce, tomato paste, and Italian seasoning; simmer for a few minutes.
  5. In another bowl, mix ricotta cheese, egg, and Parmesan cheese until smooth.
  6. Fill zucchini halves with half the mozzarella, then add ricotta mixture on top.
  7. Spoon turkey mixture over each boat and sprinkle remaining mozzarella on top.
  8. Bake for 22-25 minutes until zucchini is tender.
