Ingredients
- 2 peaches, sliced
- 8 oz halloumi cheese, sliced
- 3 corn cobs, shucked
- ½ small red onion, thinly sliced
- 3 Tbsp cilantro, chopped
- 3 Tbsp fresh lime juice
- 3 tsp honey
- Cracked black pepper to taste
Instructions
- In a small bowl, whisk together lime juice, honey, and cracked black pepper for the dressing. Set aside.
- Boil water in a large pot. Add corn cobs and cook for 1-2 minutes until tender. Remove from heat and cool completely in the fridge.
- Heat a non-stick pan over medium-high heat. Cook halloumi slices for 1-2 minutes on each side until golden brown. Cool in the fridge.
- Cut corn kernels off cooled cobs and halved halloumi slices. In a large mixing bowl, combine corn kernels, halloumi halves, peaches, red onion, and cilantro.
- Drizzle with dressing and toss gently to coat evenly.
