  • 2 medium butternut squash
  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • Salt and black pepper, to taste
  • 1/4 cup chicken broth
  • 1/4 cup Parmesan cheese (optional)
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the butternut squash and scoop out the seeds. Brush with olive oil, drizzle with honey, sprinkle with cinnamon, salt, and pepper. Place cut-side down on a baking sheet and roast for 30–40 minutes until tender.
  3. In a mixing bowl, combine shredded chicken, diced onion, minced garlic, and chicken broth. Heat over medium heat until warmed through. Stir in cheese, cranberries/raisins (if using), walnuts/pecans (if using), and season with salt and pepper.
  4. Once the squash is done roasting, scoop some flesh into the chicken mixture and stir. Stuff each squash half with the filling.
  5. Return stuffed squash to the oven and bake for an additional 15 minutes until heated through.
