Ingredients
- 2 medium butternut squash
- 2 cups cooked chicken, shredded
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp ground cinnamon
- Salt and black pepper, to taste
- 1/4 cup chicken broth
- 1/4 cup Parmesan cheese (optional)
- 1/4 cup dried cranberries or raisins (optional)
- 1/4 cup chopped walnuts or pecans (optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Halve the butternut squash and scoop out the seeds. Brush with olive oil, drizzle with honey, sprinkle with cinnamon, salt, and pepper. Place cut-side down on a baking sheet and roast for 30–40 minutes until tender.
- In a mixing bowl, combine shredded chicken, diced onion, minced garlic, and chicken broth. Heat over medium heat until warmed through. Stir in cheese, cranberries/raisins (if using), walnuts/pecans (if using), and season with salt and pepper.
- Once the squash is done roasting, scoop some flesh into the chicken mixture and stir. Stuff each squash half with the filling.
