  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 stick unsalted butter
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 tablespoon cinnamon (for peach filling)
  • 1/2 teaspoon nutmeg
  • 2 teaspoons corn starch
  • 1 teaspoon cream of tartar
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (to dust top of cobbler)
  • 1/4 cup boiling hot water

Instructions

  1. Preheat the oven to 375°F.
  2. In a greased 9×13 baking dish, combine frozen peaches, both sugars, vanilla extract, cinnamon, and lemon juice. Mix well and cover with foil; bake for 20 minutes.
  3. While the peaches bake, mix flour, sugars, baking powder, salt, and cinnamon in a bowl. Cut in cold butter until crumbly.
  4. Stir in boiling water until just combined to form drop biscuit dough.
  5. Remove peaches from the oven and dollop cobbler dough over them. Sprinkle with additional sugar and cinnamon.
