  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season beef with salt and pepper. Sear half of the beef cubes until browned on all sides; remove and set aside. Repeat with remaining beef.
  2. In the same pot, sauté onions, garlic, carrots, and celery for about 5-7 minutes until softened. Stir in tomato paste and cook for an additional minute.
  3. Add seared beef back to the pot along with diced tomatoes, apple vinegar, beef stock, and rosemary. Stir well and bring to a simmer.
  4. Cover the Dutch oven, reduce heat to low, and let cook gently for about 2-3 hours until the beef is tender.
