  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the sugar, oil or melted butter, eggs, vanilla extract, lemon juice, and lemon zest.
  4. Add the wet ingredients to the dry mixture and stir until just combined; be careful not to overmix.
