  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • sea salt, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer or using a hand mixer, cream cold butter with light brown sugar and granulated sugar until creamy. Add the egg and vanilla extract; blend until combined.
  4. Gradually mix in the dry ingredients followed by chopped chocolate and walnuts until just incorporated.
  5. Scoop dough into large balls (about 1/2 cup each), placing them on the prepared sheets. Press extra chocolate chips on top if desired.
  6. Bake for 12 to 13 minutes or until edges are golden brown but centers remain soft. Allow to cool slightly before transferring to a wire rack.
