Ingredients
- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 2 cups fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons cornstarch
- 2 tablespoons soy sauce or tamari
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 2 tablespoons neutral oil for cooking
- Green onions and sesame seeds for garnish
Instructions
- Press the tofu between clean towels for 15 minutes, then cut into 1-inch cubes.
- Toss tofu cubes in cornstarch until well-coated.
- Heat oil in a skillet over medium-high heat; add tofu in a single layer and cook for 3–4 minutes until golden brown, then flip and cook for another 3 minutes.
- Remove tofu and sauté bell peppers and onion in the same skillet for about 5 minutes until slightly caramelized.
- Stir in garlic and ginger for 30 seconds, then add pineapple chunks to caramelize for 2–3 minutes.
- Combine soy sauce, rice vinegar, and maple syrup; pour over the mixture and return crispy tofu to the skillet. Stir gently for 2 minutes until everything is well-coated.
