  • 1 ripe watermelon
  • 230 g glutinous rice flour
  • 65 g cornstarch
  • 40 g sugar
  • 300 g watermelon juice (blended)
  • 30 g butter
  • Cooked glutinous rice flour (for dusting)

Instructions

  1. Cut the watermelon into chunks, blend until smooth, and strain to obtain 300 g of watermelon juice.
  2. In a mixing bowl, combine glutinous rice flour, cornstarch, and sugar.
  3. Melt butter in another bowl and mix in the watermelon juice thoroughly.
  4. Gradually add the wet mixture to the dry ingredients while stirring to prevent lumps until thick and sticky.
  5. Steam the mixture for about 20 minutes or microwave on high for 3-5 minutes until cooked through.
  6. Allow cooling slightly before dusting your surface with cooked glutinous rice flour and rolling out the mixture to your desired thickness.
  7. Cut into squares or shapes and dust with additional flour before serving.
