  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled & roughly diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 15 oz cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese
  • salt & pepper (to taste)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped apples and onions, cooking for about 6–8 minutes until softened. Stir in chili powder and cumin.
  2. Lower the heat and melt butter in the same pot. Whisk in flour for about one minute.
  3. Gradually add chicken broth while whisking until smooth, then stir in half & half; simmer for about 3–5 minutes until thickened.
  4. Mix in the cooked chicken, cannellini beans, and softened apple-onion mixture.
  5. Adjust thickness by adding broth if needed, then stir in shredded cheese until melted.
  6. Serve hot with your choice of toppings.
