Ingredients
- 2 cups chopped rotisserie chicken
- 2 tbsp olive oil
- 2 tbsp chili powder
- 2 tsp ground cumin
- 2 apples (peeled and roughly chopped)
- 1 white onion (peeled & roughly diced)
- 4 tbsp butter
- 1/4 cup flour
- 2 1/2 cups chicken broth
- 3/4 cup half & half
- 2 15 oz cans cannellini beans (drained)
- 2 cups shredded Mexican blend cheese
- salt & pepper (to taste)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped apples and onions, cooking for about 6–8 minutes until softened. Stir in chili powder and cumin.
- Lower the heat and melt butter in the same pot. Whisk in flour for about one minute.
- Gradually add chicken broth while whisking until smooth, then stir in half & half; simmer for about 3–5 minutes until thickened.
- Mix in the cooked chicken, cannellini beans, and softened apple-onion mixture.
- Adjust thickness by adding broth if needed, then stir in shredded cheese until melted.
- Serve hot with your choice of toppings.
