Ingredients

  • 12 ounces fresh blackberries
  • 1 cup sugar
  • 5 egg yolks
  • 1 teaspoon vanilla extract
  • 3 cups half-and-half
  • a pinch of kosher salt
  • 2 ounces white baking chocolate

Instructions

  1. Mash fresh blackberries with 1/3 cup sugar in a mixing bowl and set aside.
  2. In a saucepan, heat half-and-half and remaining sugar over medium heat until dissolved. Stir in salt and vanilla.
  3. Whisk egg yolks in another bowl; gradually add warm half-and-half to temper.
  4. Return the mixture to the saucepan and cook over low heat until slightly thickened (about 10 minutes).
  5. Remove from heat, stir in chopped white chocolate until melted.
  6. Mix in mashed blackberries until fully combined; chill for at least 4 hours.
  7. Pour into an ice cream maker and churn according to instructions. Freeze for at least 4 hours before serving.
