  • 1 large onion (chopped)
  • 4 large potatoes (peeled and diced)
  • 3 large carrots (sliced)
  • 2 celery stalks (sliced)
  • 4 cups chicken or beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups cheddar cheese (shredded)
  • 1 cup milk
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional)
  • Fresh parsley for garnish
  • Extra shredded cheddar cheese for garnish

Instructions

  1. In a skillet, brown the ground beef over medium-high heat. Drain excess fat and add chopped onion and minced garlic until onions are translucent.
  2. Transfer the beef mixture to your slow cooker. Add diced potatoes, sliced carrots, sliced celery, broth, thyme, parsley, paprika, salt, and pepper. Stir well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  4. In the last 20 minutes of cooking, stir in heavy cream, shredded cheddar cheese, and milk. For a thicker consistency, add cornstarch mixed with water.
  5. Serve hot garnished with fresh parsley and extra cheese.
